We take up the challenge, not only in the countryside but also in the cellar, and then after a pressing request from our winemakers we try our hand at the alchemy of a white cuvèe to be interpreted year by year.

GRAPES: Muller 50%, Chardonnay 20%, Sauvignon Blanc 20%, Gewurztraminer 10%

HARVEST: after mid-September, done by hand after careful selection

VINIFICATION: soft pressing with destemming, followed by fermentation of the white must at a controlled temperature.

AGEING: in barriques for 18 months and further bottle ageing.

ALCOHOL PERCENTAGE BY VOL: 13.50%

ORGANOLEPTIC TEST: Persistent, full and soft, velvety and alcoholic, with balanced acidity. Golden yellow color. Intense aromatic bouquet of roses and carnations, jasmine, sweet fruit, spices.

RECOMMENDED FOOD PAIRINGS
Given its complexity, its ideal combination is with structured and intense fish dishes, with white meat dishes (including rabbit), with intense and aromatic oriental cuisine, and possibly some medium-aged cheeses.
